Brewing
Highly floral and tea-like, yet insanely aromatic, we recommend savouring this coffee as a pour over. A conical brewer like V60 or Origami will do this coffee the best justice, amplifying clarity of flavour, brightness and complexity. Pour gently using medium flow rate, this coffee doesn’t need a crazy amount of agitation of very fine grind size to shine. If you are feeling crazy, we also think this makes a wild, floral bomb of an espresso – think rich, juicy turkish delight in a cup. To let the complexity of this coffee show on espresso, we recommend grinding coarser and aiming for a ratio longer than 1:2, faster shot (16-23s, depending on your water composition and pressure).

El Encanto is a family-led project rooted in generations of coffee production. Through a deliberate renovation of their farm, the family shifted from traditional varieties to rare and expressive cultivars such as Gesha, Java, Ethiopian, Bourbon Ají, Caturra Chiroso, and Pink Bourbon — not selected for yield, but for their ability to communicate terroir and sensory depth. At El Encanto, coffee is treated as a creative language, where fermentation becomes a tool to highlight elegance rather than dominance.
